Swap Recipe: MC’s Irish Soda Bread

  • 4 cups all purpose flour
  • ½ cup corn grits
  • ¾ cup oats
  • 1 cup raisins
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 beaten egg
  • 1 ½ cups kefir (or buttermilk, or milk with a bit o’ vinegar, or yogurt – yogurt makes it moist without butter!)
  • ½ cup brown sugar


Mix all the dry ingredients together.  Beat the egg and kefir together, then add them – knead it together until they’re in a manageable ball.  Break them up into smaller balls, place them in a floured pan, and score the top and bake at 350° for 25-45 minutes (depending on their size).  The bread is done when you can tap the bottom and hear a hollow sound.
