- 4 cups all purpose flour
- ½ cup corn grits
- ¾ cup oats
- 1 cup raisins
- 1 ½ tsp baking soda
- 1 ½ tsp baking powder
- 1 beaten egg
- 1 ½ cups kefir (or buttermilk, or milk with a bit o’ vinegar, or yogurt – yogurt makes it moist without butter!)
- ½ cup brown sugar
Directions:
Mix all the dry ingredients together. Beat the egg and kefir together, then add them – knead it together until they’re in a manageable ball. Break them up into smaller balls, place them in a floured pan, and score the top and bake at 350° for 25-45 minutes (depending on their size). The bread is done when you can tap the bottom and hear a hollow sound.
