Swap Recipe: Sonia’s Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

Makes 2 – 2 1/2 dozen.

Wet Ingredients:

  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs

Dry Ingredients:

  • 1 tsp vanilla
  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 spoonful of coffee grounds

Additions:

  • 2 ½ cups oatmeal
  • 1 cup chocolate chips

Cream together butter and sugar.  Beat in eggs and vanilla.  Mix the dry ingredients (vanilla, flour, salt, soda, powder and coffee grounds) together, and then add them to the wet mix.  Add the oatmeal and chocolate chips.  Spoon tablespoon-sized dollops onto a cookie sheet.  Bake 8-10 minutes at 350°, until just turning golden – don’t over-bake these little babies!
